Mom's Filled (mincemeat or preserves) Cookies
List of Ingredients
Mix together thoroughly :
1/2 cup shortening
1 cup sugar
2 eggs
Stir in:
2 tablespoons heavy cream
1 teaspoon vanilla
Stir together in a separate bowl and then stir in :
2 3/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt

Chill the dough thoroughly!
Roll out 1/8 inch thin and cut into 3-inch rounds with a cookie or biscuit cutter. Put a teaspoon of jam, mincemeat or preserve or fruit spread filling of your choice, in the middle of each one. Brush each cookie on the outer edges with an egg wash. Then fold in half, pressing air out. Seal with the tines of a fork. Bake till golden on 350 degrees for 10-12 minutes.
