Patty Spitler's Peanut Butter Cookies
List of Ingredients
4 cups Rice Krispies
1 cup packed brown sugar
1/2 cup shortening
3/4 cup peanut butter (creamy or chumky)
1/2 cup light corn syrup
1 egg
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon saltRecipe
In a zippered bag, crush cereal into fine crumbs and set aside. Cream shortening and peanut butter together, then gradually add brown sugar and corn syrup, beating well. Add egg and beat well again. Sift dry ingredients together and stir into creamed mixture. Add cereal, blending thoroughly. Chill dough for about 1 hour till firm. Grease hands and form dough into 1-inch balls and place on greased cookie sheets about 1 1/2 inches apart. Flatten with the back of a spoon dipped in flour. Bake in 375 degree oven for 6-8 minutes or till light golden brown. Makes 3 1/2 dozen cookies.
