    Choux Pastry

    List of Ingredients




    1 cup water
    1/2 cup butter or margarine
    1/4 teaspoon salt
    1 cup flour
    4 large eggs

    In 3 quart saucepan, heat water, butter and salt to boiling over medium heat till butter has melted. Remove saucepan from heat. With wooden spoon, vigorously stir in flour all at once till mixture forms a ball and leaves side of pan. Add eggs, 1 at a time, beating well after each addition, till batter is smooth and satiny. Shape warm batter as directed in recipes. Makes 8 large cream puffs, 22 small puffs, or 30 eclairs.

    These can be filled with slightly softened ice cream.
