    Fried Ice Cream

    List of Ingredients




    1/2 cup vegetable oil
    1/2 teaspoon cinnamon
    1/4 cup cornflake crumbs
    1 can whipped cream
    2-6 inch flour tortillas
    2 large scoops vanilla ice cream
    2 tablespoons sugar
    2 maraschino cherries with stems

    Recipe



    Fry each tortilla on medium high for 1 minute per side till crispy. Mix cinnamon and sugar, sprinkle half over both sides of 2 tortillas coating evenly. Not all cinnamon and sugar will stick.

    Combine the other half of cinnamon mixture with the cornflake crumbs. Put in a shallow wide bowl or plate. Place 1 scoop of ice cream in crumbs and with your hands roll the ice cream till the entire surface is coated. You shouldn't be able to see any ice cream around the base. Place on center of tortilla.

    Spray with whipped cream around base of ice cream. Spray a ring on the top of the ball. Top with a cherry. Repeat with the other scoop. Serve with honey, chocolate syrup or strawberry topping if desired. (Caramel topping would be good too.)
