    Philedelphia Ice Creams*

    List of Ingredients




    4 cups heavy cream, or 2 cups heavy cream & 2 cups light cream
    3/4 cups sugar
    Pinch of salt
    1 teaspoon minced vanilla bean or 2 teaspoons vanilla extract

    Mix everything together and stir till the sugar is dissolved. Freeze in your electric freezer according to directions.

    *Butterscotch Ice cream
    Cook the sugar with 2 tablespoons butter till melted and well browned. Then heat the milk or cream and dissolve the sugar-butter in it. Add the rest of the ingredients.

    *Toasted Almond Ice Cream
    Add along with the vanilla, 1 cup finely chopped almonds that have been blanched and toasted till golden.

    *Coffee Ice Cream
    Add 2 tablespoons instant coffee at the time as you add the vanilla.

    *Mint Ice Cream
    Use 1 teaspoon oil of peppermint instead of vanilla. Color with green vegetable coloring.

    *Pistachio Ice Cream
    Omit the vanilla and add 1 teaspoon almond extract and 1/2 cup pistachio nuts, chopped fine. Color lightly with green vegetable coloring.

    *Peanut Brittle Ice Cream
    Omit the sugar. Crush 1/2 pound peanut brittle or pulverize in the blender, then sift into the ice cream mixture. Tast and add sugar if neccasary.

    *Peppermint Candy Ice Cream
    Omit the sugar. Crush 1/2 pound peppermint-stick candy add to heated milk or cream. Cool before freezing.
