Homemade Mexican Vanilla Extract

10 vanilla beans, split lengthwise
1 tablespoon sugar
4 cups brandy or rum (dark or light)Recipe
Pour brandy or rum in an amber-colored, sealable glass container, along with the sugar. Stir till the sugar is dissolved. Add the vanilla beans. Store sealed container in a cool, dark place. In 15 days, the spirits will be infused witht the rich scent and mahogany color of real vanilla. Makes 4 cups.
