    Rhubarb Custard Pie

    List of Ingredients




    3 cups diced rhubarb
    2/3 cups brown sugar, packed
    3 tablespoons flour
    2 tablespoons butter
    dash of salt
    3 unbeaten egg yolks
    2 tablespoons cream

    Recipe



    Fill unbaked pie shell with rhubarb. Combine egg yolks, cream, sugar, flour and salt. Pour over rhubarb and dot with butter. Bake at 350 degrees for 30 minutes. Turn oven down to 325 degrees. Cover the top with meringue made with the 3 egg whites and 6 tablespoons sugar. Make sure the meringue is spread to the crust so it doesn't shrink. Return to a 325 degree oven until meringue browns.
