Italian Style Sausage and Peppers

Preparation time: 80 minutes
3 lbs sweet or hot Italian sausage
1 jar (32 ounces) marinara sauce
1 can (8 ounces) tomato sauce
1 large green pepper (cut lengthwise)
1 large onion (cut lengthwise)
1 large tomato, chopped
1 tablespoon oregano
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
2 whole leaves and stems fresh cilantro, dicedRecipe
Boil sausage in a large pot for 1 hour and let cool; Slice sausage into 1/2 inch thick pieces, place in a 13x9 inch baking pan; Add all other ingredients in pan with sausage, mix well and cover with aluminum foil. Poke several holes with a fork in aluminum foil; Place in 350 degree oven and cook for 20 minutes or until peppers are soft. Serve over rice or pasta.
