    Pork Carnitas

    List of Ingredients




    4 1/2 to 5 pound pork roast
    Water
    2 teaspoons salt
    1/2 teaspoon each: ground cumin, ground coriander, and oregano leaves, crushed. (Try to get Mexican oregano, versus Greek, there is a really big flavor difference.)
    2 medium onions, chopped
    2 carrots, chopped

    Recipe



    Place pork in a deep pan and just barely cover with water. Add everything else, bring to a boil, cover pan, reduce heat, and simmer for 2 1/2 hours or until fork tender.

    You can spice this up or down as you wish. Some put peppers in adobo sauce in this to make it richer. I like it 'plain' for burritos.
