Sausage and Pepper Dogs

List of Ingredients




1 large onion, sliced
3 tablespoons olive oil
2 green peppers, cut into strips
2 sweet red peppers cut into strips
1 clove garlic, crushed
Salt and freshly ground black pepper to taste
8 sweet Italian sausages
2 tablespoons water
8 hot dog rolls

Recipe



Heat the oil in a large skillet, add the onion and sauté until lightly browned. Add the peppers, along with the crushed garlic clove. Season with salt and pepper to taste. Cook, stirring occasionally, until the peppers are soft, about 20 - 25 minutes

While the peppers and onions are cooking, start the sausages. Prick them so they won't burst, then place in a large skillet with 2 tablespoons water and cook over medium heat until brown, about 15-20 minutes. Add a cooked sausage and a heaping layer of peppers and onions to each roll.
