Bacon and Cheddar Cheese Skins
List of Ingredients
4 mediuim size Russet potatoes
1/2 - 3/4 cup Cheddar cheese, grated
1/4 cup butter, melted
4 strips bacon fried and crumbled
3 tablespoons drained, sliced, black olives
1/3 cup green onion chopped (white and green parts)
salt and pepper to taste Recipe
Scrub potatoes, pierce in several places. Preheat oven to 400 degrees and place potatoes directly on rack. Bake 45- 60 minutes or until soft. Cool. Cut potatoes in half and scoop out pulp leaving a 1/4 inch shell. Brush shells with melted butter inside and outside. Place under preheated broiler about 4 inches from the heat and broil about 5 minutes or until crispy. Mix cheese, bacon, olives, green onion and salt and pepper. Place equal amount is each potato shell. Bake in a 350 degrees oven for about 5 minutes or just until cheese has melts.
