Hawaiian Sweet Potatoes
List of Ingredients
2 medium cooked, peeled sweet potatoes
1 cup pina colada-flavored yogurt
1 tablespoon sugar
salt to taste
2 tablespoons butter
1/4 cup flaked coconutRecipe
Preheat oven to 400 degrees. Mash sweet potatoes with yogurt, 1 tablespoon of the butter and sugar. Turn into a buttered 9-inch pie pan. Bake for 30 minutes or till lightly browned. While potatoes cool, melt the remaining butter in a heavy skillet over moderate heat. Add the coconut and stir till browned. Sprinkle over the sweet potatoes. Serves 4.
