    Mini Potato Puffs(tater tots)

    List of Ingredients




    1/2 cup water
    1/2 cup milk
    2 tablespoon butter or margarine
    1/2 teaspoon salt
    1 1/3 cup dry instant mashed potatoes
    2 eggs, slightly beaten
    oil for frying

    Recipe



    In a saucepan, heat water, milk, butter or margarine and salt to boiling. Remove from heat, stir in dry instant potatoes. Cool about 10 minutes. Stir eggs into potato mixture. Refrigerate until cold, about 2 hours.

    Shape into 18 to 20 (1 1/2 inch) balls. Drop into hot oil. Fry until golden brown about 1 to 2 minutes. Drain on paper towels.

    Optional: add garlic salt, parsley and dehydrated onions, to taste.
