Potato Pancakes
List of Ingredients
4 medium baking potatoes (about 1 1/2 pounds), peeled and grated
1 small onion, finely chopped
1 egg, beaten
1/2 cup flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon white pepper
1/4 cup vegetable oil Recipe
Place the potatoes and onions in a strainer. Press down on them with the back of a large spoon to extract excess moisture. (If still watery, wrap them in a clean dish towel and squeeze firmly.) In a large bowl, combine the strained potatoes and onion, the egg, flour, baking powder, salt, and pepper, mix well.
In a large deep skillet, heat the oil over medium-high heat. Add the batter by 1/4 cupfuls to the hot oil, being careful not to crowd the pan. Fry until the pancakes are golden on both sides, turning once. (If you like them crisper, fry until they're flecked with brown.) Drain on paper towels and serve hot.
