    Chicken Shortcake

    List of Ingredients




    1 tube buttermilk biscuits (10)
    butter or margarine, melted
    1-10 ounce can condensed cream of mushroom soup
    1-10 ounce can condensed cream of chicken soup
    1/4 cup milk
    2 cups cubed cooked chicken
    1-4 ounce can mushroom stems and pieces, drained
    1/4 cup chopped green onion
    1 tablespoon chopped canned pimento

    Preheat over to 475 degrees. Remove biscuits from tube. Flatten with the palm of your hand to make 3-inch circles. Place 5 biscuits on a baking sheet; brush with melted butter or margarine. Top each biscuit with another biscuit. Press edges together, gently. Bake till golden about 7-8 minutes.

    Meanwhile, in large saucepan blend soups and milk. Add cooked chicken, mushrooms, green onions and pimento. Cook over low heat, stirring occasionally, till heated through.

    To serve, separate double biscuits; place bottom on plate. Pour on some of the chicken sauce; add top biscuit and pour more sauce over top. Serves 5.
