Chicken Taco Casserole
List of Ingredients
serves 6 to 8
1-3 pound chicken, cut up
2 cans of enchilada sauce
1 can mushroom soup
1 large onion, chopped
1/2 teaspoon garlic salt
Dash of pepper
1 small package of corn chips
1 cup of grated cheeseRecipe
Cook the chicken in salted boiling water until tender. Drain and reserve 1 cup of broth. Cut chicken in bite sized pieces. Combine chicken, enchilada sauce, soup, onion, garlic salt and pepper. Place half the corn chips in a greased baking dish. Add chicken mixture and sprinkle with cheese. Cover with remaining chips and pour reserved broth over top.
Bake at 350 degrees for about 30 minutes.
