    Turkey Pastels

    List of Ingredients




    Crust:
    1 cup flour
    1/4 cup cornmeal
    6 tablespoons butter or margarine
    1/2 cup small-curd cottage cheese

    Filling:
    1 cup packed, diced, cooked turkey
    1 cup packed, grated longhorn or cheddar cheese
    1/3 cup chopped green nions
    1/4 teaspoon black pepper
    1/4 teaspoon cumin

    Recipe



    Combine flour and cornmeal. Cut in butter till mixture resembles cornmeal. Beat in cottage cheese till a soft dough forms. (A food processor works good with this) Roll out half the dough into a 10-12 inch round. Place on lightly buttered baking sheet. Combine the filling ingredients. Spoon over pastry to within 1 inch of edge. Roll out remaining dough. Place over filling. Seal edges with a fork. Bake at 400 degrees for 20-25 minutes till golden. Serve warm or hot in wedges. Serves 4.

    Tip: No extra salt is added because of the salt in the butter and cheese. Any leftover cooked meat can be used. Also vary the cheese, like ham and swiss, chicken and Edam, beef and provolone, sausage and mozzarella. For a decorative touch, brush a beaten egg yolk over the top crust and sprinkle with cornmeal.
