Wonton Chicken Salad
List of Ingredients
1/4 cup vegetable oil
1/4 cup vinegar
21 (11 ounce) can mandarin orange sections, drained
1 medium green or red sweet pepper, cut into 1/2 inch sqaures
4 green onions, sliced into 1 inch pieces on the bias tablespoons sugar
1 tablespoon sesame or olive oil
10 wonton skins (3 inches square)
Cooking oil for frying
6 cups torn spinach
2 cups cubed cooked chickenRecipe
For dressing, in a screw top jar combine the 1/4 cup vegetable oil , vinegar, sugar, sesame oil, 1 teaspoon salt and 1/4 teaspoon pepper. Cover and shake well. Chill. Cut wontons into 1/4 inch wide strips; fry a few at a time, in shallow hot oil about 30 seconds to 1 minute or till crisp and golden, stirring occasionally. Drain on paper towel. Line a salad bowl with torn spinach. Over the spinach arrange the chicken, oranges, peppers, onions and wonton strips. Shake dressing; pour over salad and toss to coat. Serve remaining dressing on the table. Makes 6 servings.
*For another variation - omit the wontons and add 1 cup chow mein noodles, 1-15 ounce can drained pineapple chunks, 1 cup chopped celery.
