Parmesan Catfish
List of Ingredients
2/3 cup parmesan cheese, preferably freshly grated
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon paprika (optional)
1/4 cup milk
1 egg, beaten
2 lbs. skinless catfish fillets, 1 1/4 inches thick
1/4 cup butter or margarine, melted
1/3 cup sliced almonds Recipe
Combine parmesan, flour, salt, pepper and optional paprika in a shallow dish. Combine milk and eggs in another shallow dish. Dip fresh fish into milk/egg mixture, then dredge in cheese/flour mixture. Place fillets in a lightly greased baking dish. Drizzle fillets with butter, and sprinkle with almonds. Bake at 350 degrees for 20 minutes or until done.
NOTE: Substitute any mild seafood fillets that are 1 1/4 inches thick such as cod or perch or trout. Makes 6 servings.
