    Barb's Boston Baked Beans

    On the night before--

First; Wash beans in water making sure all the small stones are removed.

Second; place beans in large pan and cover with cold water till water is above the beans.(about 1/4in.above the beans)Let soak over night.

In the morning; par boil the beans in the water they soaked in for about 20 minutes or until you can put 4-5 beans on a spoon, blow on them and the skins will peel back. (they really do!)

THESE ARE DONE IN THE CROCK-POT

Now, put a layer of beans in the Crock-Pot
Add a layer of sliced onions. (use a large onion)

Add another layer of beans and a thick slice of salt pork (slice pork about 3/4 way through about 3x's across)

Add the rest of the Beans
In a cup put 1/2 cup of molasses
    1 teaspoon of dried mustard
and 3 tablespoon of brown sugar.

Stir it up and pour over the top of beans.
Take water that beans were boiled in and put in pot with beans.

Add another onion to top of beans. (I use a whole one)
If the water is not 1/2 inch over the top of the beans, just add some more. Turn Crock Pot on high for 4 hours or on low for 6 hours. Stir them 1/2 way through with a wooden spoon. If you like them a little sweeter just add another tablespoon of brown sugar and if you like them less sweet, take 1 tablespoon off from the amount you put in.
