Creamy Cauliflower Soup
List of Ingredients
1 medium head cauliflower, cut in tiny flowerets
3/4 cup butter
2/3 cup flour
2 cups chicken broth
2 cups light cream or half and half
1/2 teaspoon worcestershire sauce
3/4 teaspoon salt
1 cup grated Cheddar cheese
chopped chives or parsleyRecipe
Cook cauliflower in boiling water; drain, reserving liquid. Melt butter. Add onion and cook till soft. Blend in flour; add broth, and cook, stirring constantly, till mixture comes to a boil. Stir in 1 cup water drained from cauliflower (adding more if necessary to make 1 cup), cream, Worcestershire sauce and asalt. Add cauliflower. Heat to boiling. Stir in cheese. Serve sprinkled with chopped chives or parsley. Makes about 2 quarts.
