Marinated Vegatables
List of Ingredients
4 cups assorted fresh vegetables (select 1/2-1 cup each of any of the following: cauliflower, sliced carrots, zucchini, sliced mushrooms, green pepper strips, green beans, cherry peppers, banana peppers, green beans, black olives or stuffed green olives)
1/2 cup salad or olive oil
1/3 cup lemon juice
1 teaspoon each dried thyme and basil leaves, crushed
1 teaspoon sugar
1/2 teaspoon pepper
1/4 teaspoon each dry mustard, salt and garlic saltRecipe
Combine prepared vegetables in a bowl. Combine remaining ingredients in a jar. Shake vigorously to blend. Pour over vegetables. Cover and refrigerate 4 hours or overnight. Put marinated vegetables in a 1-quart jar. Shake jar several times to coat top vegetables with marinade. These vegetables will keep 4-5 days in the refrigerator.
