    Mexican Rice

    List of Ingredients




    2/3 cup chopped onion
    3 Tablespoons bacon fat or vegetable oil
    1 cup converted raw white rice
    1 cup chopped green pepper
    2 teaspoon chili powder
    1 8-oz. can diced tomatoes (I use a larger can because I love tomatoes!)
    1 teaspoon salt

    Recipe



    In medium saucepan with tight fitting lid, saute onion in bacon fat or oil until tender. Stir in rice, green pepper, chili powder, tomatoes and salt.

    Add two cups water (I cup if using larger can of tomatoes). Bring to a boil. Reduce heat and simmer, covered, for 20 minutes or until liquid is absorbed and rice is cooked.
