Wilted Salad
List of Ingredients
This is a gourmet version of an old family recipe. It's well worth the effort.
12 ounces bacon, partially frozen
1 head of red leaf lettuce, de-veined and torn into pieces
6 green onions, sliced
1 Portobello mushroom, rinsed, gilled and sliced
1 red, yellow or green bell peppers
2-4 tablespoons sugar

Put the lettuce in a large heat proof bowl. Cut the partially frozen bacon (do not divide it into slices) into about 8 pieces (it will be large diced pieces when cooked). Cook over medium high heat, and separate as it cooks, till crisp. Drain the bacon, set aside on a paper towel. Reserve 3/4 cup of the bacon grease in the pan.
Place the bell peppers in the pan and cook till tender. Add the mushrooms to the pan and cook till tender. Add the onions and the vinegar. When adding the vinegar, be sure you pour it into the pan slowly and on the side so it won't splash you. (Also don't inhale the fumes) Add the bacon, stir to get the bacon back up to heat. Add sugar, pepper and salt according to your tastes. Pour over lettuce and toss to coat all the lettuce.
Serve immediately. Serves 4.
Notes: Do not keep for another meal as the lettuce will turn to water. You could use your favorite lettuce or greens. Iceberg lettuce doesn't do well with this recipe.
