Stuffed Zucchini Boats
List of Ingredients
1 zucchini (about 12-inches long and 3-inches thick)
3/4 to 1 lb hamburger
1 large onion, chopped
3 cloves garlic, minced
1 green pepper, chopped
2 ripe tomatoes, peeled and chopped
salt and pepper
Parmesan cheese
bread crumbs
tomato sauce

Saute onion, garlic and green pepper in butter. Cook hamburger. Cut off the stem end of the zucchini, then boil it in salt water, for 15 minutes. Cut through center lengthwise. Scoop out the center of zucchini leaving about 1/2-inch in shell, to form a ‘boat’. Turn boat upside down to drain off liquid. Chop the pulp you took out of
the zucchini and saute in with onion etc. Add cooked hamburger and tomatoes; let simmer until some liquid is cooked off, it will still look a little soupy. Add salt and pepper to taste.
Remove from heat, let cool a little and it will thicken some. Add lots of Parmesan cheese. Put zucchini boats in long casserole, side by side, fill with mixture. Cover with lots of bread crumbs, then tomato sauce. Bake at 375 degrees for about 1/2 hour. Add Cheddar cheese and bake about 15 to 30 minutes, until bubbly.
