American Chop Suey
Quick, easy and hearty
List of Ingredients
- 1# ground beef
- 1# box of elbow macaroni
- 1 med yellow onion - diced
- 1 med green pepper - diced
- 4 stalks celery - sliced
- 1 large can whole peeled tomatoes - hand crushed into small pieces, saving any liquid in the can
- Salt - to taste
- Pepper - to taste
Instructions
- Prepare the macaroni according to box instructions and texture preference (this can be cooking while you are cooking the other ingredients. When done, drain well.
- In a 10 or 12 inch skillet, over med heat, add a small amount (1 tbsp) of cooking oil and saute the onions, green pepper and celery til tender.
- Add the ground beef to the skillet, pinching it into small pieces and distributing evenly. Stir to cook the meat well.
- Add the tomatoes and liquid to the skillet and stir til heated well.
- Add the cooked macaroni to the skillet and toss well to mix all ingredients.
- Transfer into a large casserole dish to serve.
Final Comments
Leftovers can be easily reheated, covered, in a microwave or oven.
