    American Chop Suey

    Quick, easy and hearty


    List of Ingredients


    • 1# ground beef
    • 1# box of elbow macaroni
    • 1 med yellow onion - diced
    • 1 med green pepper - diced
    • 4 stalks celery - sliced
    • 1 large can whole peeled tomatoes - hand crushed into small pieces, saving any liquid in the can
    • Salt - to taste
    • Pepper - to taste


    Instructions


    1. Prepare the macaroni according to box instructions and texture preference (this can be cooking while you are cooking the other ingredients. When done, drain well.
    2. In a 10 or 12 inch skillet, over med heat, add a small amount (1 tbsp) of cooking oil and saute the onions, green pepper and celery til tender.
    3. Add the ground beef to the skillet, pinching it into small pieces and distributing evenly. Stir to cook the meat well.
    4. Add the tomatoes and liquid to the skillet and stir til heated well.
    5. Add the cooked macaroni to the skillet and toss well to mix all ingredients.
    6. Transfer into a large casserole dish to serve.


    Final Comments


    Leftovers can be easily reheated, covered, in a microwave or oven.
