    Pineapple Upside Down Cake

    I like this best made with a cast iron skillet, but any pan will do.

    List of Ingredients




    1/3 C. butter
    1/2 C. brown sugar
    1 Can (1 lb. 4 oz.) sliced pineapple, drained
    1 1/3rd C. flour
    1 Cup sugar
    2 Tbsp. baking powder
    1/2 tsp. salt
    1/3 C. shortening, melted
    2/3 C. milk
    1 tsp. vanilla
    1 egg

    Recipe



    Melt butter in a heavy skillet or baking pan that you are using to make the cake in. Sprinkle brown sugar on top. Drain the pineapple and layer onto the butter/sugar mix.

    Stir flour, sugar, baking powder and salt in a bowl. Add shortening, milk and vanilla. Beat on medium speed for 2 minutes. Add egg and beat another 2 minutes. Pur batter over the pineapple.

    Bake 40-50 minutes until done. Immediately turn upside down over a plate. Leave pan on the cake for a few minutes.
