moo's *Killer* Chicken Fettuccini

List of Ingredients
1# chicken breasts (I usually grill, then dice, but you can poach them)
1 1/2# fettuccini noodles, cooked to package directions
1/4 cup butter, don't substitute for oleo
1/2-1# button mushrooms (I use 1#)
2 cups heavy cream
3/4 cup freshly grated Parmesean cheese (no canned here, please!)
1/4 cup grated mozzarella cheese
1/4 cup grated Swiss cheese
1 cup frozen peas, thawed -OR- steamed broccoli florets
Recipe
Saute' the mushrooms in the butter until they are caramelized. Add the diced cooked chicken and the fettuccini. Stir until well coated.
In a heavy saucepan, mix together the heavy cream and the cheeses. Stir until all the cheese has melted and all is combined. Add the peas or broccoli. Mix. Pour over the chicken and fettuccini mixture and toss lightly.
