    Rhubarb Muffins

    List of Ingredients

    One and one quarter cup brown sugar
    One egg
    One half cup salad oil
    Two teaspoons vanilla
    One cup buttermilk
    One and a half cups rhubarb
    One half cup chopped walnuts
    Two and one half cups, plus one tablespoon unsifted flour
    One teaspoon baking powder
    One teaspoon baking soda
    One half teaspoon salt

    Recipe

    Mix flour mixture into liquid and rhubarb/nut mixture until just blended. Spoon into 24 muffin tins.

    Topping:
    One tablespoon butter or margarine
    One third cup sugar
    One teaspoon cinnamon
    Mix well. Scatter over cakes. Press into batter. Bake at 400 degrees 20 to 25 minutes.
    These muffins freeze beautifully.
