One Cup Raisins
6 to 7 slices stale bread, torn
One 7-oz can crushed pineapple
Cinnamon to taste
1/2 cup butter or margarine
Two cups sugar
One thirteen ounce can evaporated milk
Two cups sweet milk
Three or four eggs, beaten
One teaspoon vanilla
Whipped topping or Lemon Sauce
Recipe
Soak raisins in hot water to cover in bowl for several minutes. Layer bread, raisins and pineapple in 9 X 13 inch baking dish. Sprinkle generously with cinnamon. Melt butter in saucepan. Stir in sugar until dissolved. Add evaporated milk and sweet milk. Bring to boil; cool to room temperature. Add eggs and vanilla; mix well. Spoon over layers;let stand for 30 minutes. Preheat oven to 350 degrees. Bake pudding for 30 minutes. Serve warm or cool with whipped topping or Lemon Sauce.
