    Chocolate Covered Mints

    These make an excellent gift, especially at Christmas.


    List of Ingredients


    • 1 stick margarine, softened
    • 1/3 cup light Karo syrup
    • 1 lb. powdered sugar
    • 2-3 drops peppermint oil
    • chocolate for dipping


    Instructions


    1. In a large mixing bowl, mix margarine with syrup. Add peppermint oil.
    2. Stir in powdered sugar, a little at a time. Cover and chill for several hours, or overnight.
    3. Melt chocolate in top of double boiler, stirring til smooth.
    4. Shape mint mixture into 1 inch balls and flatten into thick patties. Dip in melted chocolate and set on wax paper to set.


    Final Comments


    Shape and dip each mint one at a time. This takes time and patience, but worth the effort.
