Chocolate Covered Mints
These make an excellent gift, especially at Christmas.
List of Ingredients
- 1 stick margarine, softened
- 1/3 cup light Karo syrup
- 1 lb. powdered sugar
- 2-3 drops peppermint oil
- chocolate for dipping
Instructions
- In a large mixing bowl, mix margarine with syrup. Add peppermint oil.
- Stir in powdered sugar, a little at a time. Cover and chill for several hours, or overnight.
- Melt chocolate in top of double boiler, stirring til smooth.
- Shape mint mixture into 1 inch balls and flatten into thick patties. Dip in melted chocolate and set on wax paper to set.
Final Comments
Shape and dip each mint one at a time. This takes time and patience, but worth the effort.
