    Carrot Casserole

    This can be served for an entree for a vegetarian meal or as a side dish.


    List of Ingredients


    • 1 lb. fresh carrots
    • 1 can cream of mushroom soup
    • 1/4 cup water
    • 1/4 cup chopped onion
    • 1/2 cup chopped celery
    • 1 clove minced garlic
    • 1 cup grated cheddar cheese
    • 1 cup seasoned croutons plus extra to sprinkle on top
    • salt and pepper


    Instructions


    1. Clean, slice and cook carrots til almost tender; drain.
    2. Mix mushroom soup and water til smooth. Add garlic, celery,onion and carrots.
    3. Add cheddar cheese and croutons. Season to taste with salt and pepper.
    4. Pour into a large buttered casserole dish and sprinkle croutons on top.
    5. Bake at 350 degrees until cheese is melted,about 30 minutes. Serve hot.
