Even people that don't usually like fruitcake like this one. It's really that good.
List of Ingredients
1 cup flour
1 cup sugar
1 tsp. salt 1/2 tsp. baking powder
1/2 cup plus 2 tsp. orange juice concentrate
2 eggs,slightly beaten, plus 2 egg whites
1 cup chopped pecans
1 cup chopped walnuts
10 oz. jar marachino cherries, drained and patted dry
1 cup chopped pitted dates
1 cup white raisins
1/2 cup powdered sugar
1 tsp. water
Instructions
Preheat oven to 350 degrees.In a large bowl, mix flour, sugar, salt,baking powder, 1/2 cup orange juice concentrate and eggs and whites.Blend in nuts and fruit. Mix well. Pour into greased 9 x 5" loaf pan.
Bake for 2 hours.Cover with foil and bake 15 minutes more, or until toothpick inserted in center comes out clean.Let stand 15 minutes.Remove from pan.
In a small bowl, mix powdered sugar, water and remaining orange juice.Drizzle over cake while still hot.Cool completely before storing.
To store: Wrap in plastic wrap, then in foil.Store in refrigerator.Serves 15.
Final Comments
This fruitcake may also be soaked in rum, if desired. Leave off frosting, and pour 1/2 cup light rum over cooled cake. Wrap and store as above.
