ROAST LEG OF LAMB

Recipe Introduction
I love the taste of fresh lamb, and here in Ontario we get
some of the best lamb available. This roast comes out
so tasty that even people that don't like lamb will try it.
List of Ingredients
2 Cloves of garlic (pressed, grated, minced...stepped on, whatever)
1 Tablespoon fresh parsley flakes
1 Leg of lamb. Approximately 2 to 2-1/2 pounds
salt and pepper to taste
Recipe
Place roast in a medium roasting pan. Add about a ½ inch of water into
bottom of the pan. Stick a knife into several places in the roast and
spoon garlic into slot. Sprinkle salt, pepper, parsley onto top of the roast.
Roast at 350 for about 40 minutes. Meat is cooked when still just
slightly pink.
This is served nicely with roasted potatoes and fresh veggies.
