    List of Ingredients


    • Slaw:
    • 5 cups Napa cabbage, thinly sliced
    • 2 cups red cabbage, thinly sliced
    • 2 large carrots, peeled and cut into matchstick strips
    • 8 large green onions, cut into matchstick strips
    • 1 large red bell pepper, cut into matchstick strips
    • 1 large yellow bell pepper, cut into matchstick strips
    • 1/2 cup chopped fresh cilantro
    • 3 tablespoons sunflower seed kernels
    • Dressing:
    • 6 tablespoons rice vinegar
    • 4 tablespoons vegetable oil
    • 2 tablespoons sesame oil
    • 5 tablespoons creamy peanut butter
    • 3 tablespoons soy sauce
    • 3 tablespoons packed brown sugar
    • 2 tablespoons minced or grated fresh gingerroot
    • 1 1/2 tablespoons minced garlic
    • 2 teaspoons Thai chili sauce
    • 1/2 teaspoons red pepper flakes


    Instructions


    1. Whisk dressing ingredients together till smooth, cover and chill. Let stand 30 minutes to room temperature before continuing. Can be prepared one day ahead.
    2. Mix slaw ingredients in a bowl, add dressing and toss to coat. Makes 4-6 servings.
