List of Ingredients
- Slaw:
- 5 cups Napa cabbage, thinly sliced
- 2 cups red cabbage, thinly sliced
- 2 large carrots, peeled and cut into matchstick strips
- 8 large green onions, cut into matchstick strips
- 1 large red bell pepper, cut into matchstick strips
- 1 large yellow bell pepper, cut into matchstick strips
- 1/2 cup chopped fresh cilantro
- 3 tablespoons sunflower seed kernels
- Dressing:
- 6 tablespoons rice vinegar
- 4 tablespoons vegetable oil
- 2 tablespoons sesame oil
- 5 tablespoons creamy peanut butter
- 3 tablespoons soy sauce
- 3 tablespoons packed brown sugar
- 2 tablespoons minced or grated fresh gingerroot
- 1 1/2 tablespoons minced garlic
- 2 teaspoons Thai chili sauce
- 1/2 teaspoons red pepper flakes
Instructions
- Whisk dressing ingredients together till smooth, cover and chill. Let stand 30 minutes to room temperature before continuing. Can be prepared one day ahead.
- Mix slaw ingredients in a bowl, add dressing and toss to coat. Makes 4-6 servings.
