4 (4 ounce) skinless boneless chicken breast halves
1/2 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon vegetable oil
Instructions
Combine first 3 ingredients in a small bowl; set aside.
Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle chicken with salt and pepper.
Heat oil in a large skillet over medium-high heat. Add chicken, and saute for 3 minutes on each side. Remove chicken from skillet. Reduce heat; carefully add broth mixture. Return chicken to pan; cook 3 minutes or until done, turning to coat.
