Dry-Fried Green Beans

List of Ingredients
- 12 ounces green beans
- 1 dried red chile
- 1 cup peanut oil
- 1 tablespoon garlic -- chopped
- 1 teaspoon ginger root -- chopped
- 2 teaspoons dark soy sauce
- 1/4 cup water
- 1/2 teaspoon sesame oil
- Seasonings:
- 2 teaspoons rice vinegar
- 1 teaspoon MSG -- optional
- 1/2 teaspoon salt
- 1 teaspoon sugar
Instructions
- Trim beans and cut in half. Chop the chile into small pieces.
- Heat peanut oil until very hot. Fry the green beans and remove after 30 seconds. Drain the oil away.
- Add the seasonings and beans to the pan and saute for a further 30 seconds. Add soy sauce and water and simmer over low heat until almost evaporated.
- Add the vinger and sesame oil and toss to blend. Taste to see if more salt or vinegar is needed
