    Noodles with Spicy Meat Sauce

    List of Ingredients


    • 2 tablespoons vegetable oil
    • 2 dried red chilies, chopped
    • 1 teaspoon grated fresh ginger
    • 2 cloves garlic, finely chopped
    • 1 tablespoon chili black bean paste
    • 1 pound minced pork or beef
    • 1 pound broad flat egg noodles
    • 1 tablespoon sesame oil
    • 2 scallions, chopped, for garnish
    • Sauce:
    • 1/4 teaspoon salt
    • 1 teaspoon sugar
    • 1 tablespoon soy sauce
    • 1 teaspoon mushroom ketchup
    • 1 tablespoon cornstarch
    • 1 cup chicken broth
    • 1 teaspoon Shaohsing wine or dry sherry


    Instructions


    1. Heat the vegetable oil in a large saucepan. Add the dried chilies, ginger and garlic. Fry until the garlic starts to color, then gradually stir in the chili black bean paste.

    2. Add the minced pork or beef, breaking it up with a spatula or wooden spoon. Cook over a high heat until the minced meat changes colors and any liquid has evaporated.

    3. Mix all the sauce ingredients in a cup. Make a well in the center of the meat mixture. Pour in the sauce mixture, and stir together. Simmer for 10-15 minutes until tender.

    4. Meanwhile, cook the noodles in a large saucepan of boiling water for 5-7 minutes until just tender. Drain well. and toss with the sesame oil. Serve topped with the meat sauce and garnished with the scallions.

    5. Serves 4-6
