Orange Ginger Chicken with Cucumber Salad
List of Ingredients
- 1 teaspoon dark sesame oil
- 1/2 teaspoon chili oil
- 4 (4 ounce) boned and skinned chicken breast halves
- 1/2 cup orange marmalade
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon minced fresh ginger
- 1 tablespoon water
- 2 cloves garlic, minced
- hot lo-mein noodles
- chopped green onions
- Cucumber Salad:
- 2 cucumbers, sliced
- 1/3 cup rice vinegar
- 1 teaspoon sugar
- 1/8 teaspoon red pepper flakes
- 1 tablespoon chopped cilantro
Instructions
- Heat oil in nonstick skillet over medium heat. Add chicken; cook 6 minutes on each side or till done. Add marmalade and remaining ingredients, cook 2 minutes or till thick and bubbly. Remove from heat.
- Slice chicken; arrange over cooked lo mein noodles. Sprinkle with chopped green onion. Serve with cucumber salad.
- Cucumber Salad: Combine all salad ingred. except cucumbers; mix well. Pour over sliced cucumbers.
