    • 1/3 cup teriyaki sauce
    • 3 tablespoons frozen pineapple-juice concentrate
    • 1 1/2 tablespoons rice vinegar
    • 1/2 teaspoon hot sauce, plus more to taste
    • 1/2 teaspoon cornstarch
    • 1/2 fresh pineapple or 20-ounce can unsweetened pineapple chunks, drained
    • 2 teaspoons canola oil
    • 1 tablespoon minced fresh ginger
    • 1 pound large shrimp, peeled and deveined
    • 1 bunch scallions, trimmed and cut into 1-inch lengths
    • salt to taste


    Instructions


    1. In a small bowl, whisk teriyaki sauce, pineapple-juice concentrate, vinegar, hot sauce and cornstarch. Set aside.
    2. If using fresh pineapple, with a large knife, peel pineapple half. Cut lengthwise into 4 wedges and crosswise into 3/8-inch-thick slices.
    3. In a wok or large nonstick skillet, heat 1 teaspoon oil over high heat until very hot. Add giner and stir-fry until fragrant, about 30 seconds. Add shrimp and stir-fry until pink, 2 to 3 minutes. Transfer to bowl.
    4. Heat remaining 1 teaspoon oil until very hot. Add pineapple and scallions and cook, stirring occasionally, until pineapple is brown in spots, about 4 minutes. Add reserved sauce mixture and shrimp and heat through, about 1 minute. Adjust seasoning with salt. Serve immediately.
    5. Servings: 4 per serving: 241 cal, 5g fat, 175mg chol, 25g carb, 25g pro, 2g fiber, 1095mg sod.
