    List of Ingredients


    • 2 cups snow peas, trimmed (about 8 ounces)
    • 1 (8 ounce) package rice sticks
    • 1 teaspoon dark sesame oil
    • 1/2 cup chopped green onions
    • 1 1/2 tablespoons minced peeled fresh ginger
    • 2 cloves garlic, minced
    • 1/2 cup light coconut milk (such as Hokan)
    • 1/2 cup water
    • 1/4 cup tomato paste
    • 1 1/2 teaspoons curry powder
    • 1/2 teaspoon salt
    • dash ground red pepper
    • dash ground red pepper
    • 1/4 cup minced fresh cilantro


    Instructions


    1. Cook snow peas and rice sticks in boiling water 3 minutes. Drain well.

    2. Heat oil in a large nonstick skillet over medium heat. Add onions, ginger, and garlic, and saute 2 minutes. Stir in milk and next 5 ingredients; bring to a boil. Cover , reduce heat, and simmer 5 minutes, stirring frequently. Combine snow peas, rice sticks and green onion mixture in a large bowl, and sprinkle with cilantro.
