Low Fat Orange Muffins

List of Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 egg
- 1/4 cup orange juice
- 1 tablespoon or more of grated orange peel
- 1/2 teaspoon vanilla
- 2 tablespoons vegetable oil
- 1 (8 ounce) container of orange yogurt (not sugar-free)
- 1/3 cup Craisins (optional)
Instructions
- Spray 12 cup muffin pan with cooking spray – don’t use liners. Preheat oven to 400 degrees.
- Combine first 5 ingredients in large bowl. Make a well in center. In separate bowl, mix egg, vanilla, oil, yogurt orange juice, and orange peel. Mix well then pour into bowl with dry ingredients. Stir only until blended. Stir in Craisins.
- Bake at 400 for 15 to 18 minutes or until golden.
- about 2 1/2 grams of fat and 170 calories.
