Pineapple Sour Cream Muffins

List of Ingredients
- 1/4 to 1/3 cup sugar
- 1 egg
- 1/4 cup stick margarine (lite) melted and cooled a little
- 1 cup fat free sour cream
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup well drained crushed pineapple
Instructions
- Preheat oven to 375.
- n a large bowl, beat sugar and egg. Mix in margarine and sour cream. Mix well. In a separate bowl, mix dry ingredients. Fold dry ingredients into sugar mixture. Stir in pineapple.
- Bake at 375 for 17 to 20 minutes.
- Each muffin as about 127 calories and 2 grams of fat
