    Sweet Potato Biscuits

    List of Ingredients


    • 2 cups all-purpose flour
    • 1/3 cup yellow cornmeal
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/3 cup chilled butter or stick margarine, cut in small pieces
    • 1 cup mashed cooked sweet potato
    • 1/2 cup fat-free milk
    • 2 tablespoons honey


    Instructions


    1. Preheat oven to 400°.
    2. Combine flour, cornmeal, baking powder and salt in a bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add sweet potato, milk and honey; stir just until moistened.

    3. Bake for 20 minutes or until golden.

    4. Servings: 16

    5. 134 cal, 4.1g fat, 2.5g pro, 21.9g carb, 11mg chol, 196mg sod.
