Fiesta Brunch Casserole

List of Ingredients
- 7 ounces canned chopped green chilies, drained
- 3 (6-inch) corn tortillas
- 1/2 pound hot Italian sausage
- 2 cups Monterey Jack cheese
- 4 eggs
- 1 1/2 cup milk
- 1/4 tablespoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon cumin
- 1/4 teaspoon pepper
- 1 tomato
Instructions
- Grease an 8 x 8" baking pan. Brown sausage and drain well.
- Spread half of drained chilies into bottom of pan. Slice tortillas into 1/2" strips; lay half over chilies. Top with 1/2 sausage, and 1/2 of cheese; repeat layers.
- In a bowl, beat together eggs, milk and spices; pour over cheese. Slice tomato and lay on top. Cover and chill overnight.
- Preheat oven to 350 degrees.
- Uncover casserole and bake 30-45 minutes or until set in center and edges are lightly browned. Serve with or without sour cream and salsa.
