    Fiesta Brunch Casserole

    List of Ingredients


    • 7 ounces canned chopped green chilies, drained
    • 3 (6-inch) corn tortillas
    • 1/2 pound hot Italian sausage
    • 2 cups Monterey Jack cheese
    • 4 eggs
    • 1 1/2 cup milk
    • 1/4 tablespoon salt
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon cumin
    • 1/4 teaspoon pepper
    • 1 tomato


    Instructions


    1. Grease an 8 x 8" baking pan. Brown sausage and drain well.

    2. Spread half of drained chilies into bottom of pan. Slice tortillas into 1/2" strips; lay half over chilies. Top with 1/2 sausage, and 1/2 of cheese; repeat layers.

    3. In a bowl, beat together eggs, milk and spices; pour over cheese. Slice tomato and lay on top. Cover and chill overnight.

    4. Preheat oven to 350 degrees.

    5. Uncover casserole and bake 30-45 minutes or until set in center and edges are lightly browned. Serve with or without sour cream and salsa.
