    Make Ahead Eggs Benedict

    List of Ingredients


    • 4 English muffins, toasted
    • 16 thin slices Canadian bacon
    • 8 poached eggs
    • 1/4 cup margarine
    • 1/4 cup flour
    • 1 teaspoon paprika
    • 1/8 teaspoon nutmeg
    • 1/8 teaspoon pepper
    • 2 cups milk
    • 2 cups Swiss cheese (8 ounces)
    • 1/2 cup dry white wine
    • 1 tablespoon margarine, melted
    • 1/2 cup crushed cornflakes


    Instructions


    1. In 9x13 baking dish (I spray this with Pam), arrange English muffins, cut side up. Place 2 bacon slices on each muffin. Poach eggs just until they are set. Place egg on muffin and bacon.

    2. Melt 1/4 cup margarine in medium saucepan. Stir in flour, paprika, nutmeg and pepper. Add milk all at once. Cook and stir until thick and bubbly. Stir in cheese until melted. Stir in wine.

    3. Spoon sauce on muffin stacks. Combine cornflakes and melted margarine. Sprinkle over stacks. Cover and chill overnight.
    4. Bake uncovered at 375* for 20-25 minutes.
