- 1 cup water
- 1 cup 2% low-fat milk
- 1/2 cup sugar
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1 1/2 cups yellow cornmeal
- 1 tablespoon vanilla extract
- 3 large eggs, lightly beaten
- cooking spray
Instructions
- Combine first 5 ingredient in a medium saucepan; bring to a boil. Gradually add cornmeal, stirring constantly with a whisk. Remove from heat; cool 10 minutes. Add vanilla and eggs, stirring well with a whisk.
- Heat a nonstick skillet coated with cooking spray over medium-high heat. Spoon about 1/3 cup batter into pan. Cook 2 1/2 minutes on each side or until golden brown. Repeat procedure with remaining batter.
