Noodles with Spicy Meat Sauce

- 2 tablespoons vegetable oil
- 2 dried red chilies, chopped
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, finely chopped
- 1 tablespoon chili black bean paste
- 1 pound minced pork or beef
- 1 pound broad flat egg noodles
- 1 tablespoon sesame oil
- 2 scallions, chopped, for garnish
- Sauce:
- 1/4 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon soy sauce
- 1 teaspoon mushroom ketchup
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 1 teaspoon Shaohsing wine or dry sherry
Instructions
- Heat the vegetable oil in a large saucepan. Add the dried chilies, ginger and garlic. Fry until the garlic starts to color, then gradually stir in the chili black bean paste.
- Add the minced pork or beef, breaking it up with a spatula or wooden spoon. Cook over a high heat until the minced meat changes colors and any liquid has evaporated.
- Mix all the sauce ingredients in a cup. Make a well in the center of the meat mixture. Pour in the sauce mixture, and stir together. Simmer for 10-15 minutes until tender.
- Meanwhile, cook the noodles in a large saucepan of boiling water for 5-7 minutes until just tender. Drain well. and toss with the sesame oil. Serve topped with the meat sauce and garnished with the scallions.
- Serves 4-6
