    List of Ingredients


    • 1 egg
    • 1 egg white
    • 3/4 cup sugar
    • 1/2 cup packed brown sugar
    • 3 tbsp canola oil
    • 1 tsp vanilla
    • 1 1/2 cups all-purpose flour
    • 1 tsp baking soda
    • 1/2 teaspoon salt
    • 1 1/2 cups rolled oats
    • 1/2 cup raisins


    Instructions


    1. Coat a 13" X 9" baking pan with no-stick spray and set aside.
    2. In a food processor, mix the egg, egg white, sugar and brown sugar until smooth. Add the oil and vanilla; process for 10 to 15 seconds. Add the flour, baking soda and salt. Process until the mixture is just blended. Add the oats and incorporate with on/off turns.
    3. Sprinkle with the raisins and use a fork to lightly mix them in. Transfer the dough to the prepared pan. Wet your fingers with water and press the dough evenly into the pan. Bake at 350 degrees F for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan. Makes 24.
    4. Per serving: Calories: 117, Fat: 2.3 g. (17% of calories), Saturated fat: 0.3 g., Cholesterol: 9 mg., Sodium: 104 mg.


    Final Comments


    If you like, replace all or part of the raisins with chocolate chips.
