    Italian Tortellini Stew


    List of Ingredients


    • 1 medium onion, chopped
    • 2 medium zucchini, shredded
    • 1 large carrot, shredded
    • 2 (14-1/2 oounce) cans ready to serve chicken or vegetable broth
    • 1 (28 ounce) can crunshed tomatoes, undrained
    • 1 (15.5 ounce) can great northern beans, drained and rinsed
    • 2 tablespoons fresh basil, copped
    • salt and pepper to taste
    • 1 (8 ounce) package uncooked, dry cheese filled tortellini


    Instructions


    1. Combine all ingredients except tortellini in crock pot; mix well. Cover; cook on low for at least 6 hours.

    2. When ready to serve, increase heat to high; add tortellini. Cook an additional 20 minutes, or until tortellini are soft.

    3. Servings: 8



    Final Comments


    Note: Can substitute fresh tortellini (9 ounces) and reduced the final cooking time to about 10 minutes or till done.
